Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/4 teaspoon red pepper flakes (adjust to taste)
1 (15-ounce) can lentil soup
1 (15-ounce) can diced tomatoes, undrained
2 sweet potatoes, peeled and cubed
4 cups vegetable broth
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
Stir in garlic, cumin, coriander, turmeric, and red pepper flakes. Cook for 1 minute more.
